About Our Honey

ALBERTA PREMIUM NATURAL HONEY honey is non-processed, which means it has not been subjected to the heat of processing, only warmed enough to flow. We select only Alberta Premium Honey that is pure, smooth and creamy, with the consistency of soft margarine. Because it has not been processed, it contains live yeast and enzymes. It also contains pollen because it has not been filtered, merely screened.

ALBERTA PREMIUM LIQUID HONEY has been heated to melt the honey crystal, and filtered to remove foreign material and unmelted crystals.

ALBERTA PREMIUM CREAMED HONEY is made in the same way as liquid honey (heated to melt, and filtered), but then it is purposely re-crystallized by adding some previously creamed honey to the batch. Crystals grow and propagate on these nuclei to form a "firm" product. Hardness depends on floral sources, moisture levels and storage temperature.

Try these suggestions for uses of honey!
  • To decrystalize honey, simply place container in the dishwasher with the lid on!
  • Use honey instead of other sweeteners. The flavour of cakes and biscuits, particularly those which use fruit, is enhanced with honey and their keeping qualities are improved.
  • Substitute honey for sugar in a cake. Use the same weight measure of the sweetener but reduce the liquid in the recipe by one quarter. For example, you would use cup of milk instead of one cup. Reduce recommended cooking temperature by 15°C.
  • Add honey to plain cuts of meat to make exotic dishes. When basted with honey, vegetables will always be exciting if tossed in honey and butter.
  • Add honey to creamed cheese as a spread, use it on grapefruit or as a topping for ice cream for extra goodness and flavour. Use it in your tea or coffee, cordial or cocktails.
  • Take honey by the spoonful to give yourself extra energy in training. Honey in water makes an excellent healthy sports drink with the honey replacing glycogen levels.
